    I had no idea that National Oatmeal Month was a thing! My daughter has developed a love for oatmeal after being diagnosed with celiac, so I’ll be passing these recipes along to her.

    I am not a huge fan of oatmeal. There are so many delicious sounding recipes here i am sure to find a few i like. I would love to enjoy a bowl of oatmeal for breakfast.

    I don’t much like oatmeal because I eat according to textures but my mom loves it and eats it every single day. My husband has also been eating alot of it lately to because of the cold mornings.

    I love oatmeal. When I decided to go all out on low carb, it was one of the things I missed most. Now I just eat the steal cut whole grain. That way I feel better about eating them. I have a few recipes on my site and I am always looking for more to try.

    I’m actually on a nutrition plan & have been eating far more oatmeal than before so I really appreciate these recipes. Maybe some of them can fit into my plan, or even be modified to fit.

    Oatmeal is my sister’s favorite quick breakfast. I used to eat this by the bucket when I was pregnant. Now not so much! Who knew there was so many different oatmeal recipes!

Sorry Kanye, but this is the greatest of all time. Sorry Kanye, but this is the greatest of all time. The Goat of all soups. And it’s easy to make too. 

🍁 Vegetable Soup 
Here’s what you need: 
2 Tbsp olive oil
1 1/2 cups chopped yellow onion (1 medium)
2 cups peeled and chopped carrots (about 5)
1 1/4 cups chopped celery (about 3)
4 cloves garlic , minced
4 (14.5 oz) cans low-sodium chicken broth* or vegetable broth
2 (14.5 oz) cans diced tomatoes (undrained)
3 cups peeled and 1/2-inch thick diced potatoes (from about 3 medium)
1/3 cup chopped fresh parsley
2 bay leaves
1/2 tsp dried thyme
Salt and freshly ground black pepper
1 1/2 cups chopped frozen or fresh green beans
1 1/4 cups frozen or fresh corn
1 cup frozen or fresh peas 

Instructions:

🍁 Heat olive oil in a large pot over medium-high heat. 
🍁 Add onions, carrots, and celery and saute 4 minutes then add garlic and saute 30 seconds longer.
🍁 Add in broth, tomatoes, potatoes, parsley, bay leaves, thyme and season with salt and pepper to taste*.
🍁 Bring to a boil, then add green beans. 
🍁 Reduce heat to medium-low, cover and simmer until potatoes are almost fully tender, about 20 - 30 minutes. 
🍁 Add corn and peas and cook 5 minutes longer. Serve warm.
