Easy Soup Recipes for Cold Nights

Winter nights can be downright cold and miserable. Nothing warms you up on those cold nights like a nice hot bowl of soup. Here are some soup recipes that are easy to make and will warm you right up!

Broccoli & Cheese Soup- Makes 8 servings

4 garlic cloves, minced
3 ½ cups vegetable broth
1 cup heavy cream
4 cups broccoli, chopped into florets
3 cups cheddar cheese, shredded

Using a large soup pot, over medium heat, add the minced garlic and cook for 90 seconds. Then, add in vegetable broth, heavy cream and broccoli florets. Next, turn the heat up to high and bring to a boil. Next, turn the heat down to medium-low heat and allow to simmer for 20 minutes, or until broccoli is tender. Next, add in shredded cheese and stir constantly until the cheese is melted.

Italian Sausage & Tortellini Soup- Makes 4 servings
1 package Italian sausage, cut into 1-inch chunks
9-ounce package three cheese tortellini
3 14-ounce cans chicken broth
16-ounce package frozen kernel corn

Using a large soup pot, over medium heat, add in Italian sausage chunks and cook for 7-9 minutes, or until browned. Then, add in tortellini, chicken broth and corn kernels. Next, turn the heat down to low and simmer for 13-15 minutes, or until sausage is completely cooked and the tortellini is tender.

Wild Rice & Mushroom Soup- Makes 8 servings
2 ½ tablespoons olive oil
1 ½ pounds mushrooms, chopped
2 6-ounce packages long grain and wild rice mix
32 ounces beef broth
2 cups heavy cream

Using a large soup pot, over medium-high heat, add in olive oil and mushrooms and cook for 5-6 minutes, or until mushrooms are tender. Then, add in rice mixes (along with both seasoning packets) and beef broth. Then, bring to a boil. Next, turn the heat down to medium-low heat, cover and simmer for 30 minutes. Next, add in the heavy cream and heat for 10-15 minutes, or until thoroughly heated.

Yummy! Nothing like some good old comfort food.

    My family LOVES a good soup on a cold night. We are getting snowed in tomorrow, so it will be a perfect time for soup.
