Best Brain Boosting Breakfasts

We all know that breakfast is the most important meal of the day. Eating a good breakfast is not only good for your body, but your brain as well. So, give your brain the best possible start to the day with these brain boosting foods.


Egg Sandwich with Swiss Cheese and Tomato
Tomatoes are good for your brain, containing carotenoids, which is good for enhancing learning and memory.

Ingredients:
1 egg
1 teaspoon olive oil
1 English muffin, toasted
1 slice Swiss cheese
1 slice tomato

Directions:
Fry the egg in the olive oil. Add the egg, Swiss cheese slice and tomato slice to the bottom half of the English muffin. Then, top with the top half of the English muffin.


Greek Yogurt with Walnuts
Walnuts are the best nuts when it comes to brain power. They contain an Omega-3 Fatty Acid, DHA, which is great for brain performance.

Ingredients:
2 cups Greek yogurt
3 tablespoons walnuts, chopped

Directions:
Add the walnuts to the top of the yogurt.


Whole Grain Waffles with Blueberries and Flaxseed

Whole grain waffles contain Vitamin B6, which help to improve memory and prevent mental fatigue. Blueberries contain tannins, which improve brain health and flaxseed contains Omega-3 Fatty Acids.

Ingredients:
2 whole grain waffles, toasted
½ cup blueberries
½ cup plain yogurt
1 teaspoon flaxseed

Directions:
Top each waffle with ¼ cup of blueberries, ¼ cup of plain yogurt and ½ teaspoon of flaxseed.


Whole Grain Cereal with Apples
Apples are great for boosting your brain because they contain Quercetin, which protects the brain from oxidative stress. Just add some sliced apples to your bowl of breakfast cereal. Some great examples of whole grain cereal include Multi Grain Cheerios, Total Whole Grain Cereal and Post Great Grains Crunchy Pecan.


Whole Grain Toast with Peanut Butter
Peanut butter contains Vitamin B6, which help with attention and focus. Just top a slice of whole grain toast with some of your favorite peanut butter.

    Eggs are definitely a good breakfast to have to get the brain going. Peanut butter too on toast or apple slices even. I enjoy fruit too with my breakfast! Great ideas that I’d like to try!

    I eat peanut butter toast almost daily! I love it because it’s so easy, and it’s quick. Those others are great options too.

    Whenever I want a quick, but comforting breakfast I always turn to the egg and cheese sandwich. It fills me up and makes me happy. I also feel the same about a peanut butter sandwich with banana.

    I have to admit that I am not a breakfast person. But, I am starting to realize that I am losing out each day that I don’t eat something. I often tend to forget more things in meetings in the morning, and my energy level is simply not where it is during the afternoon after lunch. These are some great recipes to get me started. Sorry Kanye, but this is the greatest of all time. Sorry Kanye, but this is the greatest of all time. The Goat of all soups. And it’s easy to make too. 

🍁 Vegetable Soup 
Here’s what you need: 
2 Tbsp olive oil
1 1/2 cups chopped yellow onion (1 medium)
2 cups peeled and chopped carrots (about 5)
1 1/4 cups chopped celery (about 3)
4 cloves garlic , minced
4 (14.5 oz) cans low-sodium chicken broth* or vegetable broth
2 (14.5 oz) cans diced tomatoes (undrained)
3 cups peeled and 1/2-inch thick diced potatoes (from about 3 medium)
1/3 cup chopped fresh parsley
2 bay leaves
1/2 tsp dried thyme
Salt and freshly ground black pepper
1 1/2 cups chopped frozen or fresh green beans
1 1/4 cups frozen or fresh corn
1 cup frozen or fresh peas 

Instructions:

🍁 Heat olive oil in a large pot over medium-high heat. 
🍁 Add onions, carrots, and celery and saute 4 minutes then add garlic and saute 30 seconds longer.
🍁 Add in broth, tomatoes, potatoes, parsley, bay leaves, thyme and season with salt and pepper to taste*.
🍁 Bring to a boil, then add green beans. 
🍁 Reduce heat to medium-low, cover and simmer until potatoes are almost fully tender, about 20 - 30 minutes. 
🍁 Add corn and peas and cook 5 minutes longer. Serve warm.
