Fresh and Easy No-Cook Summer Recipes

There are those hot summer days or nights where you just don’t want to turn the oven on, right? Well, it is time to give your oven a vacation. Here are some fresh and easy summer recipes that don’t require any cooking.

Apple & Walnut Salad– Makes 6 servings

Ingredients:
¼ cup olive oil
2 tablespoons red wine vinegar
1 tablespoon Dijon mustard
Salt and pepper to taste
5 ounces baby kale
1 green apple, diced
2/3 cup walnuts, chopped
½ cup cheddar cheese, shredded

Directions:
In a salad dressing shakes, combine olive oil, red wine vinegar, Dijon mustard, salt and pepper. Shake well to mix. In a large bowl, add baby kale, green apple, walnuts and cheddar cheese. Toss well to mix. Drizzle salad dressing over the salad and toss well to coat.



Cantaloupe & Mint Soup- Makes 4 servings

Ingredients:
6 cups cantaloupe chunks
¼ cup honey
½ cup orange juice
1 tablespoon fresh mint, finely chopped

Directions:
In a blender, combine cantaloupe, honey and orange juice. Pulse until smooth. Add mixture to a large bowl, cover and refrigerate. Add fresh mint before serving.


Chicken Salad Wraps- Makes 2 servings

Ingredients:
2 cups cooked chicken, cooled and chopped
½ cup mayonnaise
1 tablespoon lemon juice
1 stalk celery, chopped
Salt and pepper to taste
2 spinach tortillas

Directions:
In a large bowl, combine chicken, mayonnaise, lemon juice, celery, salt and pepper. Mix together well. Spoon ½ of the mixture onto one tortilla and the other ½ onto the other tortilla. Fold the bottom of each tortilla upwards, fold each side over and then fold the tops over.

Crab Rolls- Makes 4 servings
Ingredients:
½ pound crab meat
¼ cup mayonnaise
1 stalk celery, chopped
2 tablespoons lemon juice
Salt and pepper to taste
4 hot dog rolls

Directions:
In a large bowl, combine crab meat, mayonnaise, celery, lemon juice, salt and pepper. Mix together well. Divide the mixture evenly into the hot dog rolls.

    Those chicken salad wraps sound GOOD. I am all for super easy recipes especially on hot summer days.

  • oh man crab rolls how delicious, i remember a friend in culinary school who made crab rolls and they were so goooood! he would make his own mayo and it made all the difference.

    I love fresh and easy meals. The past few days..err, weeks…have been extremely busy so I need all the meal shortcuts I can take. I’d love to try the crab rolls.

    I love summer recipes because I could survive on cold salads and wraps. My favorite is definitely chicken salad wraps!
