Easy to Make Mexican Dip Recipes

There is nothing like tortilla chips and some good ole Mexican dip. If you think that making a Mexican dip is time-consuming or calls for a lot of ingredients, think again. Here are some Mexican dip recipes that are easy to make.


Buffalo Chicken Dip-
Ingredients:
16-ounce can refried beans
8 ounces of cream cheese, softened
½ cup celery, chopped
½ cup blue cheese dressing
¼ cup hot sauce
2 cups cooked chicken, cut up

Directions:
Preheat oven to 350 degrees. Spread the refried beans onto the bottom of a casserole dish, sprayed with cooking spray. In a bowl, combine cream cheese, celery, blue cheese dressing and hot sauce. Add in chicken and stir until chicken is coated. Add mixture over the refried beans and bake for 35 minutes. Great served with celery sticks, crackers or tortilla chips.


Spicy Corn Guacamole Dip-
Ingredients:
½ cup whole kernel corn
2 avocados, peeled and diced
¼ cup onion, diced
¼ cup jalapeno slices
2 ½ tablespoons lime juice
2 tablespoons mayonnaise
½ teaspoon salt

Directions:
In a large bowl, combine all the ingredients and mix until well combined. Serve with tortilla chips.


Spicy Queso Dip-
Ingredients:
4 cups cheddar cheese, grated
1 ½ cups Monterey Jack cheese, grated
1 tablespoon cornstarch
¼ cup milk
1 small onion, minced
4-ounce can diced mild green chiles

Directions:
In a large bowl, combine cheddar cheese, Monterey Jack cheese and cornstarch, toss to coat well. In a saucepan, over low heat, add the cheese mixture and milk and cook 10-15 minutes, stirring occasionally. Add in onions and green chiles and mix together well. Simmer for 45-60 minutes, stirring occasionally. Great served with celery sticks, carrot sticks or tortilla chips.


Black Bean Dip–
Ingredients:
1 garlic clove, peeled
2 cups black beans, rinsed and drained
3 tablespoons water
2 tablespoons olive oil
1 tablespoon lime juice
½ teaspoon ground cumin
Salt and pepper, to taste

Directions:
In a blender or food processor, pulse the garlic until chopped fine. In a bowl, add the garlic, black beans, water, olive oil, lime juice, cumin, salt and pepper. Chill until ready to serve. Serve with tortilla chips.

    The guacamole dip looks so good. I’m Dominican but I have this knack for Mexican food. Its probably from my best friends dad owning a Mexican restaurant when we were in high school so we would have it weekly hahaha

    I do love a good queso even though it is so bad for you. I think my favorite though is a simple guacamole. You can go wrong with avocados and cilantro.

Sorry Kanye, but this is the greatest of all time. Sorry Kanye, but this is the greatest of all time. The Goat of all soups. And it’s easy to make too. 

🍁 Vegetable Soup 
Here’s what you need: 
2 Tbsp olive oil
1 1/2 cups chopped yellow onion (1 medium)
2 cups peeled and chopped carrots (about 5)
1 1/4 cups chopped celery (about 3)
4 cloves garlic , minced
4 (14.5 oz) cans low-sodium chicken broth* or vegetable broth
2 (14.5 oz) cans diced tomatoes (undrained)
3 cups peeled and 1/2-inch thick diced potatoes (from about 3 medium)
1/3 cup chopped fresh parsley
2 bay leaves
1/2 tsp dried thyme
Salt and freshly ground black pepper
1 1/2 cups chopped frozen or fresh green beans
1 1/4 cups frozen or fresh corn
1 cup frozen or fresh peas 

Instructions:

🍁 Heat olive oil in a large pot over medium-high heat. 
🍁 Add onions, carrots, and celery and saute 4 minutes then add garlic and saute 30 seconds longer.
🍁 Add in broth, tomatoes, potatoes, parsley, bay leaves, thyme and season with salt and pepper to taste*.
🍁 Bring to a boil, then add green beans. 
🍁 Reduce heat to medium-low, cover and simmer until potatoes are almost fully tender, about 20 - 30 minutes. 
🍁 Add corn and peas and cook 5 minutes longer. Serve warm.
