Summer Recipes to Make When It’s Too Hot to Cook

There are some days in the summer when it is just too hot to cook. The temperature outside is 95 degrees and the last thing you want to do is turn the oven on and make the house even hotter. Well, here are some recipes to make when it’s too hot to cook.

Cold Buttermilk Soup
Ingredients:
3 ½ cups buttermilk, chilled
1 cup fresh tomatoes, chopped
1 scallion, chopped
2 teaspoons jarred pesto

Directions:
In a bowl, add in the buttermilk, tomato and onion. Combine gently and scoop into soup bowls. Top the soup with 1 teaspoon of the pesto in each soup bowl before serving.

Apple and Walnut Salad
Ingredients:
¼ cup olive oil
2 tablespoons cider vinegar
½ teaspoon salt
1/8 teaspoon pepper
1 bag mixed greens for salads, torn
1 Granny Smith apple, chopped
2/3 cup of walnuts, chopped
¼ sharp Cheddar cheese, shredded

Directions:
To make the dressing for the salad, in a jar with a lid, combine the olive oil, cider vinegar, salt and pepper. Be sure the lid is tightly secured on the jar and shake well to combine. In a large salad bowl, combine the mixed greens, Granny Smith apple and walnuts. Mix together, top with shredded cheese and drizzle with dressing.

Crabmeat Rolls
Ingredients:
1 pound of crabmeat
¾ cup of mayonnaise
1 celery stalk, chopped
2 tablespoons lemon juice
Salt and pepper, to taste
Hot dog rolls

Directions:
In a bowl, combine the crabmeat, mayonnaise, celery, lemon juice, salt and pepper. Stir to mix together well. Divide the mixture into the hot dog rolls.

Roast Beef Salad
Ingredients:
1 small head of lettuce, torn into chunks
¾ pound of deli roast beef, sliced and cut into pieces
1 tomato, chopped
½ onion, chopped
3 ounces of goat cheese, crumbled
Italian salad dressing
Salt and pepper, to taste.

Directions:
In a large salad bowl, add in lettuce, roast beef, tomato, onion and goat cheese. Mix together well. Divide salad into individual salad bowls and drizzle with Italian salad dressing.

    This is really helpful. Last thing I want to do on a hot day is turn on the stove

  • I use my grill often so as not to heat the house. Salads and sandwiches are good ideas too.

  • Salads immediately came to mind when I saw your post title and you had a few. I am loving that crabmeat roll though and I might give that one a try.

  • The crabmeat sandwich looks delicious! I should try making that sometime. Love the salad too! Apples and walnuts are my favorites!

  • These are great ideas! I can testify, living in Florida, sometimes it really IS too hot to cook!

  • Sandwiches are a great way to keep the air cooler in the summer. I also like using my crockpot as another option to not using my stove and turning the oven on.
    Sandwiches and salads sound great for dinner.

  • These all sound great. I find myself just turned off food lately because its so hot, and I really don’t want to cook. So these would be great to make instead!

    I eat a lot of salads in the summer. I have never tried cold soup before. I will have to give it a try.

    Oooo so many yummy recipes!!!! I’m all about salad during the summer! Cold foods just taste better

    That Apple and Walnut Salad looks amazing. I am always looking for new salad ideas. I hate turning on my stove or oven when it’s warm.
